Lion's Mane

Fungi is infectious! I turned my boyfriend’s dad into an amateur mycologist and his first great find was 5 lbs. lion’s mane. I have serious mushroom envy right now but at least I got to take it home. It took a few tries to figure out the texture, consistency, and flavor of lion’s mane but so far, cooking it like a steak has been my favorite meal. The mushroom is dense and meaty but juicy and buttery soft. Reminiscent of lobster or scallops. It’s also good for brain function, blood pressure + other health benefits. That salad though with anchovy stuffed Spanish olives, spicy Italian salami, feta cheese, tomatoes and red onions.. ugh so good!
